Potatoes au Gratin

  1. Toss the potatoes, onion, spices, flour and cheese in a large bowl, season to taste. Spread the mixture in a buttered baking dish, then dot small bits of butter on the potatoes.
  2. Combine the wine, stock and cream, then pour over the potatoes and press the mixture down with a spoon. Bake covered at 350 for 1 hour.
  3. Combine the bread crumbs and Parmesan and sprinkle over the potatoes. Bake uncovered for 15 to 20 minutes, then remove from oven and let stand 10 to 15 minutes.
  4. Plate, garnish with parsley and serve.
